What is specialty coffee?

If we had to describe it in one word, it would be „transparency“. Specialty coffee is a lot more than that; it is a state of mind, professionalism, extensive knowledge of coffee and various flavours, and it is identified with terms such as 3rd Wave, Artisan, Craft, Boutique, Small Batch.

The supply of coffee is based on its variety, the artistic method of production, the above mentioned transparency and knowledge, from harvest to espresso in your cup. Only high-quality green Arabica beans are used and focus is on the micro market niche.

Coffee is a fruit?

Coffee is a seasonal fruit and contains acid as any fruit. What we actually roast, grind and ultimately drink is a „pit“ inside a berry similar to olives. This berry when harvested is red in color and most often contains two coffee beans. When we say seasonal, it means that coffee, as well as grapes, differs from harvest to harvest. As with the wine industry, it is very important how coffee is processed. Each process has its own qualities and defects, and each process will give us a different result in the cup.

With emphasis on transparency, the consumer can now learn about the origin of coffee, locate the farm where coffee was harvested and processed. Soil, altitude and process now play a big role, which means a lot when we taste coffee. We can compare better and worse, we can play with roasting, we can do more than just „drink coffee“. Coffee becomes an experience, not just a drink.
